We are having leftovers tonight as Gauth is working and my mother-in-law had us over for an early dinner/late lunch

Isn't that exciting? XD So no recipe from me today.
Chinese Take-out
Ingredients:
The number of a good place
the ability to dial a phone, read a menu, and speak
$12.00
Call up the place. Place an order. Show up in time to pick up food. Pay the nice man. Go home and be a glutton with signifcant other.
Seves 2 (though it should have prolly served 4)
My chili
1 lb ground beef
28 oz diced tomatoes (do NOT drain)
7 oz tomato paste (I think that is the size... it is the smallest tomato paste can you can find)
28 oz red kidney beans
1 diced green pepper
1 chopped yellow onion
1 14 of can of sliced mushrooms or sliced fresh
1 tbsp chili powder (use more or less depending on how spicy you like it, 1 tbsp is fairly mild)
1 tbsp parsley flakes (I usually forget this and it doesn't seem to make a difference)
1-2 bay leaves
Brown beef, drain and return to pot. Add all other ingredients, stir well and heat to boiling. Reduce heat and simmer 1 hour.
Really easy and tasty. Leftovers are even better, so making it ahead by a day or two to give it soaking time is great too

here's a healthy fried chicken recipe, could probably combine it with your chicken parmesan Tari, also very good way to get frustration out.
one chicken breast (or 2 thighs) per person, boneless & skinless.
breadcrumbs, whatever you think looks good
2 eggs
flour about 1 cup
Italian seasonings to your taste
meat tenderizer/flattener (small saucepan or frying pan works well)
non stick cooking spray (whatever flavor you want)
whip eggs
season flour
flatten chicken to an even thickness (about 1/2 inch)
dredge chicken in seasoned flour, then eggs, then breadcrumbs
spray chicken lightly with cooking spray
fry in dry pan (you sprayed the chicken) until lightly golden brown on each side, don't fuss with the chicken too much, the breading with flake off.
serve with whatever side you want.
